Focaccia Salmon Sandwich
Behold the sandwich of all sandwiches! This may have been the tastiest sandwich I’ve ever eaten. It is totally adaptable and can be made vegetarian or vegan or with deli meats instead of salmon etc. - whatever you have in your fridge! The two musts though: the homemade focaccia and the homemade pesto. Although the focaccia is a bit time consuming, I think that making my own really took this sandwich to a whole new level. Below are all the details for each aspect of the sandwich. Happy munching!

Focaccia
This was my first time ever making bread so I stuck to this recipe by Sally’s Baking Addiction pretty much to a tee. It was super easy and tasted fantastic - highly recommend!
Carrot Top Pesto
I got some carrots at the farmers market this past weekend and realized how much carrot top I was letting go to waste. So, I decided to make a pesto with some of the leftover tops. I will definitely be making this every time I buy carrots!
Ingredients
1 cup carrot top (washed and larger stems removed)
1 cup chopped kale
2 cloves garlic (rough chopped)
1/3 cup roasted pine nuts
1/4-1/3 cup olive oil
2 tsp lemon juice
1/4 cup parmesan cheese (optional)
Salt + Pepper to taste
Directions
Roast the pine nuts in a small pan on the stove top over medium heat. Roast until they are a light brown color then turn the heat off.
Cut off the carrots from the carrot tops. Wash the carrot tops and set aside about a cup of carrot top greens, being sure to remove the larger stems. Then chop and wash the kale, removing all large stems as well.
In a food processor, all of the listed ingredients together. Start with 1/4 cup of olive oil, then blend and add more if needed to get a creamier texture. Adjust salt and pepper to taste.
Salmon
Ingredients
1 piece of salmon
Salt
Pepper
2 tsp olive oil
Directions
1.) Preheat the oven to 350 degrees.
2.) Put an oven safe pan onto the stovetop over medium heat. Add some olive oil.
2.) While the pan and oil heat, add some salt and pepper to the salmon. Add the salmon to the with the skin-side up.
3.) Put the lid on the salmon and let it cook for 3-5 minutes until it begins to form a golden brown crust.
4.) Once, the salmon begins to get golden brown, transfer it from the stove to the oven. Leave in for 5-6 minutes or until salmon is fully cooked. Cook-time may vary based on the size of your salmon.

To assemble, toast the focaccia and stack it up with the pesto, avocado, sriracha aioli, arugula, tomato, and salmon! Hope you guys enjoy!
